Green Pepper Stir Fried Rice

Looking for a quick but a full meal? Why not try to stir fry the leftover rice from the day before! Here is a quick recipe and idea, Green Pepper Stir Fried Rice, if you have some green pepper, carrots and eggs.

Let’s start

First fill a bit of water ( 1/10 of the pan) and set it to boil, then peel, wash and dice some carrots and put them in the pot for boiling for about 5 mins.

Next, wash and dice a couple green peppers while the carrot dices are boiled.

Once the carrot dices are done, drain out the excess water and leave just a bit of water (a couple of teaspoons) on the pan.

Then put in some butter (couple tsp if you like) and crack in one or two eggs then stir, lid the pot and turn the heat low (medium low) to steam a bit for about 2 minutes.

When the eggs has been cooked (steamed), put in the rice: press and separate it as much as you can then add in the green peppers dices.

Start shake in some spice in the rice (ie. black/white peppers, a few drops of  sesame oil, a few teaspoons of soy sauce, garlic salt and paprika if you like), then turn the heat higher to medium  and start to stir fry the rice and all its ingredients for about 5 minutes or so to evenly mix and finish.
