The prep
Take 1/2 pound of brussels sprouts , 3 eggs, 1/2 lb of spinach, butter, olive oil, sweet chili sauce (Mae Ploy), garlic (3 cloves), and 1 onion.
The cooking process, a chef walk through
Start by preheating a pan for the egg at medium low heat and preheat another pan medium for cooking brussels sprout.
While wait, prepare brussels sprouts by cutting bits off of the ends (stem cut off) and split it in half, wash it in a vegetable washing basin then rinse it couple times, following through by fishing out the brussels sprouts then put them in the pan; should have little water along with the sprouts (fished out), if not, add a bid of water; about 2 table spoons, and close the lid.
Now, crack open the eggs and mix them in a mixing bowl and grease the egg frying pan with butter then pour the eggs into the preheated pan while maintaining the heat (medium low).
Next preheat another pan (medium heat) for the spinach while wait, go wash the spinach few times, dry it with a spinner. At this point, flip the eggs when firm and pancake like then turn the heat on low.
Next go dice the onion into small dices then put those dices with the brussels sprouts, stir and mix with Mae Ploy sweet chili sauce then close the lid again.
Now, separate the garlic into cloves, take out the skin and start mincing it with a spoon; just press down on it against a hard surface (cutting board or plate). Now putting the garlic to the preheated pan along with the spinach and stir fry for few minutes then pour about 2 teaspoons of olive oil to finish.
ALL Three of you dishes (brussels sprouts, spinach and eggs) should now be finishing up, cooking in their respective pans, turn all the burners off (3 supposedly) then plate each, one at a time to serve!
