As with all things coconut oil do expire. When expired, the oil would bring harmful side effects (although not immediate) vs the benefits it would bring when it is fresh   

Good coconut oil inspection

When buying coconut oil, especially when they are packaged in a clear container, this is time you can visually inspect them before you buy. 

Coconut oil should be white, with any coloration such as yellow or black spots (molds and others) may be a sign of expiring.

Look for signs in the packaging

Since things exposed to air tend to oxidize faster, so based on this common sense, choose the can of coconut oil that has least air pockets in a clear jar.
