There is a reason why those premium olive oils come in a dark tinted glass bottle, to keep them cool and away from the heat and light.
Phenol does it
The like of cooking oil as well as olive oil have phenols that act as stabilizers
for oxidation of the polyunsaturated fat rich in olive oil but it is fragile and it reacts through heat and light easily. Therefore having those oil retain its quality phenols intact is the most essential and a must!

What a better way and opposite of near a stove or a range for your oil?
You got it! Right inside your refrigerator to keep it cool!
Making the arrangement
So next time you need some oil, you might think of a way to best use/store the oil.
Suggestions might be:
Put a small amount of oil from the cool refrigerated olive oil into a small glass jar that has a good pouring spout (easy pouring into your cooking) near where you need it while keeping the majority of the oil inside the refrigerator for a safe keeping.
Or simply just reach into your fridge for the oil whenever you need it.
